Five common commercial kitchen layout types
Assembly line
Stations follow a sequential production path. This can work well for pizza, sandwiches, bowls and other repeatable menus with a consistent build sequence.
Zone-style
Separate stations handle functions such as prep, sauté, fry, grill and baking. This supports varied menus and specialized teams.
Galley
Equipment runs along opposing walls with a central aisle. It can use narrow spaces efficiently but requires careful aisle and traffic planning.
Island
A central cooking or production block anchors the room, with support functions around the perimeter. It suits larger spaces with coordinated teams.
Open kitchen
Guests can see part of the production area. Visual presentation, noise, ventilation, cleanliness and concealment of support functions become especially important.
