A hand-cranked flywheel slicer in classic Berkel red for paper-thin prosciutto sliced in front of your guests.
The Berkel 300M Heritage Prosciutto Slicer has no motor: turning the flywheel moves the carriage and turns the 12" knife together. The product is fed toward the knife automatically after each stroke, and a top clamp holds the meat securely. Berkel calls it the gold standard for front-of-the-house theatre slicing.
Without a stand, set it on a level, dry surface that carries the 70 lb. slicer plus the food. Berkel sells the 300M-STANDC stand with casters separately.
Turning the flywheel clockwise moves the carriage and food plate while the knife rotates, for precise slicing on every stroke with low resistance.
Nominal 12" (300 mm) knife of hardened, polished, forged chromium-plated carbon steel. A rear ring guard covers the non-slicing part of the edge.
The product is fed toward the knife after each stroke. The clamp holds the meat from the top for secure, even slices.
A graduated knob sets slice thickness from tissue thin to 3/16" (5 mm) for hot or cold meats and cheese.
