The Moffat Turbofan E28M4 is a manual full-size electric convection oven for bakeries, cafes, restaurants and caterers. It holds four 18" x 26" sheet pans, heats from 150 to 500°F with twin reversing fans, and runs on 208V or 220-240V single-phase power, wired in by an electrician. It sits on a counter on 3" feet, or on Moffat's SK2731U stand.

What power does it need?
Moffat lists two electrical options on one model: 208V, 1-phase, 5.4 kW, 25.8 A, or 220-240V, 1-phase, 6.0 kW, 25 A. Tell us which supply you have when you order.
Does it come with a plug?
No. Moffat supplies no cordset; a qualified electrician wires it to a grounded supply through the rear terminal block, with an all-pole disconnect switch next to the oven.
How many pans does it hold?
Four full-size 18" x 26" sheet pans, loaded side to side on four rack positions spaced 3 1/8" apart. Four wire racks are included.
How much space does it need?
It is 31.88" wide, 30" deep and 26" high on its 3" feet. Leave 8" above, 1" behind and 1" on each side, keep it 12" from heat sources, and allow 17.38" in front for the drop-down door.
Does the timer turn the oven off?
No. The 60-minute timer sounds a buzzer and lights the time-up indicator; the oven keeps heating until you turn the temperature control to Off.
Can I put it on a stand or stack two?
Yes. Moffat offers the SK2731U stand (60.75" total height with the oven) and the DSK272831 double stacking kit, on feet, or DSK272831C, on casters. Each is sold separately.
How do I clean it?
The side racks, fan baffle, door seal and inner door glass all come out without tools. Wash them with a mild detergent and hot water; avoid abrasive pads. Moffat recommends a service check every 6 months.
What does the warranty cover?
Moffat warrants new equipment installed in the US against defects in material and workmanship for 1 year from installation or 18 months from shipment, whichever comes first, for commercial use. Light bulbs, rubber seals and broken glass doors are not covered.
