The Equipex EP-800 is a half-height mobile proofing cabinet built by Roller Grill, with stainless steel inside and out. An electronic thermostat and push-button water injection make the warm, humid air that proofs raw or fresh bread, baguettes and viennoiserie at 85°F in about 2 hours, or about 2-1/2 hours from raw-frozen. It holds 8 wire racks, 23-5/8" x 15-3/4", and is made to carry an Equipex FC-100 series full-size convection oven on top. It runs on 208/240V single phase, 1400 W, with a NEMA 6-15P plug.
A NEMA 6-15 receptacle is a 208/240V outlet, not a standard 120V outlet; have one ready before delivery.
