Description
Two 6.5-gallon pans that boil, sear, deep-fry and pressure cook on their own schedules.
The RATIONAL iVario Pro 2-S with the pressure cooking option is a compact electric tilting skillet and braising pan for restaurants, cafes and production kitchens serving 50 to 100 meals per service. It has two 6.5-gallon pans you can run independently, heats each pan base to 392°F in under 90 seconds and draws 19-22 kW on a 440/480V 3-phase circuit. Pressure cooking (max. 4.4 PSI) cuts cooking time by up to 35% on stews, braised dishes, stocks and soups. This listing is the 3-phase 440/480V version.

Two pans, one footprint
Each pan holds 6.5 gallons usable (13" x 22" x 6" inside), so you can boil in one while you sear in the other.
Fast, even heat
iVarioBoost ceramic heating brings the pan base to 392°F in under 90 seconds; pan-fry up to 480°F, deep-fry up to 355°F.
Pressure cooking
The lid locks, pressure holds at up to 4.4 PSI and is released automatically at the end, cutting cooking time by up to 35% (Rational).
Zones and low temperature
iZoneControl splits the pan bases into up to four zones, and low-temperature cooking for sous vide, confit and overnight cooking is standard.
Less handling
Automatic water filling, an integrated pan drain that empties without tilting, a retractable hand shower and a motorized pan lift.
Programs and records
Store up to 1,200 programs with up to 12 steps; HACCP data via USB or ConnectedCooking over the built-in WiFi or Ethernet.

Questions buyers ask
What can it cook?
Rational lists boil (85°F to boiling), pan-fry (85-480°F) and deep-fry (85-355°F) modes plus intelligent cooking paths and low-temperature cooking, and this model adds pressure cooking.
How does the pressure cooking work?
The lid locks with an interior mechanism, the pan builds and holds pressure (max. 4.4 PSI) and releases it automatically at the end so the lid can open safely. Rational says this cuts cooking time by up to 35% on stews, braised dishes, stocks and soups.
What electrical service does it need?
3-phase 440/480V. Rational lists 25 A running with a 35 A breaker and 10 AWG cable at 440V (19 kW); 27 A running with a 35 A breaker and 10 AWG cable at 480V (22 kW), for cable runs up to 78 3/4". It comes with a 40" power cord with junction; have a licensed electrician connect it per NEC and local code.
Does it need a floor drain?
Yes. Rational requires a rear indirect floor drain with an air gap. The pan drains through its own 1 1/2" drain, so no front floor trough is needed.
Does it need a stand?
It sits on 3 1/2" plastic feet as a countertop unit. Rational offers matching 2-S stands (with feet, casters, stainless steel feet, curb mounting or electric height adjustment) as separate items. Rational's sheet says pressure cooking is not to be combined with a base with casters.
Are baskets and lift arms included?
No. Rational sells the lift arm, boiling and frying baskets, strainer and pan base racks separately, or together as accessory package 87.00.742 for the 2-S.
What warranty does it have?
New RATIONAL units carry a 2-year RATIONAL manufacturer warranty from the installation date, including parts, labor, and travel. Terms apply: Rational requires access to the unit's device data, and ConnectedCooking registration is recommended. See Rational's warranty statement.
Do you match lower prices?
Yes. Rational products are covered by our Best Price Guarantee. Use the "Request price match" link near the price.
