American Panel AP20BCF-3T Remote Roll-In Blast Chiller / Shock Freezer
The American Panel AP20BCF-3T is a HURRiCHiLL remote roll-in blast chiller / shock freezer for commercial batch cooling and freezing. Match its roll-in loading arrangement to the pans, racks and production batches used in your kitchen.
This configuration requires a separately selected remote condensing system. Size the system to the applicable manufacturer refrigeration requirements and plan the refrigerant piping, utilities and field installation before ordering. Cabinet electrical requirements do not describe the complete remote refrigeration installation.
The manufacturer publishes a chilling rating of 600 lb from 160°F to 38°F in 90 minutes. An additional published cycle is 690 lb from 160°F to 38°F in 120 minutes.
For shock freezing, the published rating is 360 lb from 160°F to 0°F in 240 minutes.
These are rated performance conditions. Food density, moisture, starting temperature, portion size, container depth and the way a batch is loaded affect the time needed to cool the food core. Use the manufacturer operating instructions to select cycles and position the product probe.
