Description
An additional HV-100G oven section to stack on the HV-100G you already have, with legs, casters and stacking kit.
The Blodgett HV-100G ADDL is an additional oven section for stacking on an existing HV-100G. It includes one oven, 8-1/2" stainless steel legs, casters and the stacking kit, and takes five 18" x 26" sheet pans or ten 12" x 20" x 2-1/2" steam table pans. Incremental humidity control and a Hydroburst shot of 100% humidity let you roast, steam, poach or bake in one cavity. It burns natural gas or LP at 60,000 BTU/H (gas type chosen when you order) and needs a 115V, 10 A receptacle.

Hot air mode and a four-speed, auto-reversing 3/4 hp fan give an even bake on all five racks at 140-500°F.
Cook and hold by probe
A removable 4" fillet core probe runs cook-and-hold programs; the standard control stores 100 recipes, uploaded or downloaded by USB.

Questions buyers ask
What gas and power hookups does it need?
A 3/4" NPT gas connection for natural gas (7.0" W.C.) or propane (14.0" W.C.), 60,000 BTU/H. The 115V model comes with a cord and plug for a dedicated 10 A NEMA 5-20R receptacle; a 208/240V, 5 A version for a NEMA 6-15 receptacle is available.
Will it fit through my door?
Blodgett lists a minimum entry clearance of 25.6" uncrated and 30-1/2" crated per section. Measure every door and turn on the delivery path before ordering.
How much does it hold?
Five 18" x 26" full-size sheet pans loaded left to right, or ten 12" x 20" x 2-1/2" steam table pans at 3.25" spacing. Each section has 5 stainless steel racks and 10 rack positions; Blodgett lists a maximum shelf load of 60 lb.
How is a Hydrovection oven different from a convection oven?
It has the same 38" footprint as a full-size convection oven but adds humidity: incremental humidity control, a Hydroburst shot of 100% humidity and a vent switch, so one cavity can bake with dry heat or roast, steam and poach with moisture.
What water and drain does it need?
A 3/4" garden-hose cold-water connection at 30-50 psi and a 1.25" O.D. drain rated above 160°F, with backflow protection per local code. Water must be within Blodgett's limits (TDS 40-125 ppm, hardness 35-180 ppm, pH 7.0-8.5); Blodgett's manual says running it without a water pressure regulator voids the warranty.
What do I need to stack it?
An existing HV-100G to stack on. The ADDL includes one oven section, 8-1/2" stainless steel legs, casters and the stacking kit; the stacked pair stands 63.6" high.
What does the warranty cover?
Blodgett gives a 1-year parts and 1-year labor warranty and includes a factory-paid start-up inspection. Damage from improper ventilation or installation is not covered.
