CMA Dishmachines EST-66 66" Conveyor Dishwasher, High/Low Temp

CMA EST-66 is a commercial dishwasher designed for high-volume dishwashing in restaurants, hotels, and other foodservice establishments. With its conveyor belt system, this CMA EST-66 dish machine is a powerhouse of efficiency and reliability. It effortlessly handles nearly 249 racks of dishes, utensils, and glassware, ensuring thorough washing, rinsing, and drying cycles for impeccable cleanliness. The machine promises consistent performance and streamlines the dishwashing process by transporting many items on its 66-inch (167.64-cm) conveyor belt. It is crafted from stainless steel to uphold hygiene standards and stand the test of time in demanding commercial environments.

Main Features of CMA EST-66

CMA EST-66 is a conveyor belt-type dishwasher built for high-output applications. CMA Energy Mizer® Dishwasher is convertible between low and high-temperature operations. The low-temp module operates between 140°F-150°F (60°C-68°C) and provides chemical sanitizing. The high-temp sanitizing occurs within the 150°F-160°F (66°C/71°C) range, applying a final rinse cycle at 180°F-195°F (82°C/90°C).

CMA EST-66 Wash and Rinse Cycles

CMA EST-66 conveyor system ensures a continuous flow of dishes through 4 stages, making it perfect for fast-paced settings where a high volume of dishes needs to be processed efficiently. The 2 wash and 2 rinse cycles guarantee spotless dishes and top hygiene standards. The operational direction is customizable.

Pre-Wash Stage: The soiled dishes are loaded into the CMA dishwasher through its large opening of 19 inches (48.26 cm). The conveyor's pre-wash length is 22 inches (55.88 cm). High-pressure spray nozzles remove food particles and debris from the loaded items. The dirt removed from the dishes is collected in the machine's stainless steel scrap accumulator. This initial wash cycle prevents residue from clogging the machine's filters and maintains more effective cleaning.

Wash Stage: The dishes in the dish rack pass through a series of powerful rotating wash arms equipped with spray nozzles. The spray arms deliver hot water mixed with detergent or a cleaning solution. CMA EST-66 uses an automatic soil purging system (ASPS) at this stage. When the ASPS senses and traps the debris in the wash water to ensure dishes are always washed with clean water.

Power-Heated Rinse: The sanitized dishes are rinsed with a power rinse heater system. A 1/3 HP rinse pump motor sprays rinse water at a minimum of 160°F (71°C) in high-temp and 140°F-150°F (60°C-68°C) in low-temp operation.

Final Rinse: CMA EST-66 raises the water temperature in this stage to rinse off any remaining cleaning agents and kill bacteria. The task is achieved at 180°F-195°F (82°C-90°C) temperatures during high-temp and at 140°F-150°F (60°C-68°C) temperatures during low-temp operation.

CMA EST-66 Chemical Pumps and Dispensers

CMA EST-66 Energy Mizer® Dishwasher pumps detergent, rinse aid, and sanitizer through color-coded feed lines: red for detergent, blue for rinse aid, and white for sanitizer. The chemical injection chamber is made of 316-grade stainless steel for greater durability.

CMA EST-66: Ease to Use and Safe

CMA EST-66 minimizes dishwashing down to a single on/off button. The machine starts filling with water with the push of the on button. Put the rack on the loading tray and let the conveyor carry it through the wash cycles at a 6.75 ft./min. (206 cm/min.). The auto-fill and automated water control systems ensure the dishwasher always has enough water at the desired temperatures. During continuous loading, the table limit switch at the other end of the conveyor stops the machine to prevent potential damage to the machine, dishracks, and the dish table.

CMA EST-66 Rack Size Compatibility

CMA EST-66 comes with 1 open and 1 peg rack, both sized 20" x 20" (50.8 x 50.8 cm). The peg rack securely holds cups and saucers upright, allowing the water-detergent mix to reach their interiors and exteriors. The open rack is ideal for washing dishes, pots, or pans in the same cycle.

CMA EST-66 Motor Power and Water Ratings

This CMA dishwasher consumes only 0.46 gallons (1.7 liters) of water per rack, amounting to 114.54 gallons (433.6 liters) per hour. The HP ratings for the wash pump, rinse pump, and conveyor belt are 1, 1/3, and 1/8, respectively.

CMA EST-66 Tank Capacity

CMA EST-66 features a dual tank design. The total capacity of 18.5 gallons (70.0 liters) is shared separately for different cycles: 2.5 gallons (9.5 liters) for the pre-wash and 11.75 gallons (44.5 liters) for the wash cycle.
