Edlund BDSS-16 16 lb. Deluxe Baker's Dough Scale, Stainless Steel Platters, with Scoop and Weights
Description
An even balance scale that lets a bakery portion dough by weight, up to 16 lb. with 1/4 oz. steps.
The Edlund BDSS-16 is a 16 lb. even balance baker's dough scale from Edlund's BDSS Deluxe series. You set pound weights on the right platter and slide the poise along the ounce beam, which reads in 1/4 oz. steps up to 1 lb. Edlund adds 12 gauge stainless steel platters and a stainless steel poise and beam to the standard design, and it stands on rubber foot pads. It comes with an oversized footed plastic scoop, a scoop counterweight and a set of measuring weights.

Scoop and counterweight
The oversized footed plastic scoop sits on the left platter. Its counterweight, filled with salt once at setup, offsets the empty scoop.
Stainless platters
12 gauge stainless steel platters, poise and beam resist chipping and rust. Rubber foot pads keep the scale steady.
Two 9" platters
Both platters are 9" across, and the scale measures 19-3/4" x 7-1/2" x 9" overall.
Calibrate in place
Edlund's calibration uses shot added inside the right balance arm, then a check with the 1 lb. weight at the 16 oz. poise mark.
Delivery and setup
- Inspect the carton for damage before you sign, and note any damage on the delivery receipt.
- Calibrate the scoop counterweight with salt before first use, as Edlund's instructions describe, and keep the scoop and counterweight together.
- Keep the pivot area free of flour; Edlund's calibration steps start with a clean pivot.
