Hatco CHW-43-QS Quick-Ship Cook & Hold Countertop Heated Well, 4/3-Size, Wet/Dry, 1800W, 120V
Description
A 4/3-size countertop well that rethermalizes food in water and then holds it hot for service.
The Hatco CHW-43 is the high-watt, cook and hold version of Hatco's countertop heated well. Its 1800 watt metal sheathed element rethermalizes food in wet operation, or holds it hot wet or dry. The well takes one full-size pan plus one third-size pan with an accessory pan support bar, or four third-size pans with accessory pan support bars. It plugs into a standard 120V outlet with a 6 ft. cord and NEMA 5-15P plug, so it works on a buffet line, catering table or back counter without a hookup. This is the Quick-Ship stock version: Hatco's Quick-Ship list shows item CHW.00002, with (4) Third-Size Pans and (4) 1" Legs. The Canadian version uses a NEMA 5-20P plug.

Cook and hold
The 1800 W high-watt element rethermalizes food in wet operation and then holds it. Hatco says not to rethermalize food in the same unit while it is holding hot food.
Wet or dry operation
It can run dry, but Hatco says it performs best with water. Fill with hot tap water to the MAX line and refill at the MIN line; a Dry indicator light comes on when the well runs dry.
Simple controls
A lighted On/Off rocker switch and an adjustable temperature dial marked 1 to 7. Preheat with an empty pan for about 30 minutes.
Heavier stainless well
The well is .8 mm thick 304 stainless steel inside a stainless steel housing with an aluminized steel bottom.
Keeps the counter dry
A pan edge offset helps keep condensation from dripping onto the countertop.
Pan flexibility
Takes 1 full-size + 1 third-size pan or 4 third-size pans. Adapters HW-2-11QT (two 11-quart inserts) and HW-4-4QT (four 4-quart inserts) convert it for round inserts.
Delivery and setup
- Inspect the carton for damage before you sign, and note any damage on the delivery receipt.
- It arrives assembled. Remove the tape and packaging, set it on a level counter strong enough for the unit and food, and make sure all feet sit firmly.
- Have a grounded 120V NEMA 5-15P outlet within reach of the 6 ft. cord. Hatco says a qualified electrician should fit the right receptacle if the plug does not match.
- Standard manufacturing oils may smoke for up to 30 minutes on first startup. Run it empty until the smoke clears.

It holds one full-size pan plus one third-size pan with an accessory pan support bar, or four third-size pans with accessory pan support bars. Hatco sells 12" (HW12BAR) and 20" (HW20BAR) pan support bars and adapters HW-2-11QT (two 11-quart inserts) and HW-4-4QT (four 4-quart inserts).
