Marra Forni FC35M Fork Dough Mixer, 42 Qt. Bowl, 77 lb. Dough Capacity, 1.5 HP, 220V Single-Phase
Description
A 42 qt. fork mixer that folds up to 77 lb. of pizza or bread dough without heating it.
The Marra Forni FC35M is a fork dough mixer for pizzerias, bakeries and restaurants that make their own dough. It kneads 35 kg (77 lb.) of dough with 50 lb. of flour in a 42 qt. stainless steel bowl, about 90-110 dough balls per 17-20 minute mix. The 1.5 hp motor runs on 220V single-phase power from a 15 A circuit. Fork mixing folds and oxygenates the dough instead of heating it, which suits soft and high-hydration doughs.

Folds, does not heat
The fork folds and oxygenates the dough quickly, so it does not warm up from friction during mixing.
Belt and gear drive
A motor with two gear reducers in an oil bath drives the bowl and fork through trapezoidal belts and cast iron pulleys.
Guarded bowl
The transparent polycarbonate cover over the bowl trips a switch and stops the fork when it is lifted; START restarts it once closed.
Low-voltage controls
The side control panel works at 24V, and the electrical parts sit in an IP54 box with short-circuit and overload protection.

Questions buyers ask
What electrical service does it need?
It runs on 220V single-phase power and needs a 15 A circuit. The mixer has a power cable on its side; any plug or switch not supplied by Marra Forni must match the nameplate rating, and the machine must be connected through a manual disconnect.
Will it fit in my kitchen?
It measures about 23.33" wide, 34.84" deep and 35.04" high and weighs 320 lb. Place it on a flat, solid floor with room to reach every side for cleaning and service, and measure doorways on the delivery path.
How much dough does it make per batch?
Marra Forni rates it for 35 kg (77 lb.) of dough and 50 lb. of flour in a 42 qt. bowl. That is about 90-110 dough balls per 17-20 minute mix.
Fork mixer or spiral mixer?
Marra Forni recommends fork mixers for soft and high-hydration doughs: the fork folds the dough and oxygenates it without warming it, so the oven, not the mixer, heats the dough. Spiral mixers handle a wider range of doughs and mix about twice as fast.
What can I mix in it?
Marra Forni designed its mixers for flour-and-water doughs for pizza, bread and other baked goods. Using it for anything else is treated as misuse and voids the warranty.
How do I maintain it?
Clean the bowl, fork and grill daily and the whole machine weekly with a mild detergent for food machines, with the power disconnected. A trained technician should adjust the drive belt tension after the first 20 hours and then monthly, and the power cord should be checked monthly.
Why is there no price on this page?
Marra Forni equipment is quoted per order. Call (201) 467-8222 or request a quote for current pricing, lead time and freight to your ZIP code.
What does the warranty cover?
Marra Forni's mixer manual lists a one-year parts and labor warranty from the date of purchase, excluding damage from improper installation, maintenance, misuse or tampering. Repairs must be done by an authorized technician. Ask us for the current terms with your quote.
