The Moffat Turbofan E31D4 is a half-size digital convection oven for cafes, bakeries, delis and restaurants. It holds four half-size sheet pans or hotel pans, stores up to 20 programs, and adds a broil mode for browning and finishing. It sits on a counter in 31.88" of width and plugs into a 208V or 220-240V NEMA 6-15 receptacle.

What power does it need?
Moffat lists two single-phase options at 60 Hz: 208V, 2.9 kW, 13.9 A, or 220-240V, 3.1 kW, 12.9 A. Tell us which supply you have when you order.
What outlet does it use?
It comes with a 15 A NEMA 6-15P cord and plug, so you need a matching 250V 15 A receptacle, not a standard 120V outlet. The manual calls for an isolation switch next to the oven that the operator can reach.
How many pans does it hold?
Four half-size sheet pans or hotel pans, on four rack positions spaced 3 1/8" apart. Four wire racks are included. It does not take full-size 18" x 26" sheet pans.
Can it broil?
Yes. A top broil element and a broil key let you switch to broil at any time in manual or program mode; the oven then returns to the temperature you set.
How much space does it need?
It is 31.88" wide, 24.25" deep (26.13" with the handle) and 24.63" high on its 3" feet. Leave 8" above, 2" behind, 2" on the left and 3" on the right, 12" from heat sources, and keep the rear vent clear. The side-hinged door swings out 25.5".
Can I put it on a stand or stack two?
Yes. Moffat offers the SK2731U stand (59.25" total height with the oven) and the DSK272831 (feet) or DSK272831C (casters) double stacking kits. All are sold separately.
Does it need a water line?
No. Moffat lists no water connection or moisture injection for this model; it needs only power.
What does the warranty cover?
Moffat warrants new equipment installed in the US against defects in material and workmanship for 1 year from installation or 18 months from shipment, whichever comes first, for commercial use. Light bulbs, rubber seals and broken glass doors are not covered.
