The Moffat Turbofan P8M is a full-size proofer and holding cabinet for bakeries, cafes, restaurants and caterers. It takes eight 18" x 26" sheet pans, proofs at 65-105°F with auto-fill humidity, holds at 150-185°F, and plugs into a 120V outlet. At 28.88" wide it matches the Turbofan E32D5 oven, which can stack on top.

Questions buyers ask
What outlet does it need?
A standard 110-120V outlet for its 15 A NEMA 5-15P plug. It draws 1.45 kW, 11.6 A, single phase, and the manual calls for a clearly marked isolation switch next to the cabinet.
Does it need a water line?
For humidity in proof mode, yes: the auto-fill tank connects to cold water with a 3/4" GHT fitting at 20 to 80 psi. Hold mode does not use the humidity system.
Can I use it to hold cooked food?
Yes. Switch it to Hold and set 150 to 185°F; the humidity system is disabled in that mode. A dial thermometer shows the cabinet temperature.
How many pans does it hold?
Eight full-size 18" x 26" sheet pans or sixteen 18" x 13" half-size pans, on 3" spacing.
Can I stack an oven on it?
Yes. Moffat designed it to work alone or with the Turbofan E32D5 and G32D5 ovens. The DSKE32P8 kit stacks an E32D5 on top, and the DSKP8 kit stacks two P8M cabinets; kits are sold separately.
How much space does it need?
It is 28.88" wide, 31.88" deep and 36" high on casters. It can sit against the wall and the left side, needs 1" on the right, and 12" from heat sources. The door swings out 22.63".
How do I clean and maintain it?
Pull the side racks and water tank weekly and wash them with mild detergent, descale the tank element with white vinegar when it scales, and empty the condensation drawer. Moffat recommends service every 6 months.
What does the warranty cover?
Moffat warrants new equipment installed in the US against defects in material and workmanship for 1 year from installation or 18 months from shipment, whichever comes first, for commercial use. Light bulbs, rubber seals and broken glass doors are not covered.
