A 74" 5-well electric steam table that holds hot food wet or dry on the serving line, with a sneeze guard to protect it.
The Prepline EST74-5O-SG gives cafeterias, caterers, buffets and serving lines 5 open 12" × 20" wells, each with its own heat control and indicator light. The wells run dry, or wet with spillage pans (sold separately), and need no plumbing or drain. A removable 1/2" poly cutting board runs along the front, and the stainless steel undershelf holds pans, plates and lids. This package adds an angled stainless steel sneeze guard that stands 15" above the top and protects the food on 3 sides. It plugs into a 208-240V NEMA 6-20P outlet on a dedicated 20 A circuit. Pans are sold separately.

No. It holds food that is already cooked. The manual says to preheat for 45 minutes, load pre-cooked food at 160°F or more, and notes that NSF requires holding food at a minimum of 150°F.
