Description
A mobile, insulated cabinet that keeps 18 sheet pans of food hot and moist until service.
The Atosa CookRite ATHC-18 is a stainless steel heated holding cabinet for caterers, banquet kitchens, cafeterias and bakeries. It holds 18 full-size 18" x 26" sheet pans behind a clear door, so staff can see the product without letting heat out. A water tray adds humidity, the insulated cabinet holds heat, and four casters move it to the line or the loading dock. It runs on 120V but needs a 20-amp outlet.

Questions buyers ask
What outlet does it need?
A 120V, 20-amp outlet that matches its NEMA 5-20P plug. Atosa's manual says to put it on its own branch circuit; it draws 2,000 W.
Can it proof dough?
Atosa's older ATHC manual and the control panel include a proof setting with the water tray filled. Atosa's current sheet lists it as a warming and holding cabinet, so call us if proofing is your main use.
How hot does it get?
Atosa's current sheet lists heat settings from 90°F to 220°F; older Atosa documents list 80°F at the low end. Its manual puts typical holding at settings 6-8 for 150°F to 160°F.
What pans fit?
18 full-size 18" x 26" sheet pans.
What does the warranty cover?
Atosa's CookRite cooking and holding equipment warranty covers 1 year parts and labor from the date Atosa ships it.
