Description
A 5-pan electric combi oven that steams, roasts and bakes in one cabinet and cleans itself at the end of the day.
The Atosa AEC-0511E is a Smart Touch electric combi oven for restaurants, hotels, schools and caterers that want steam, convection and combination cooking from one 31"-wide unit. It holds 5 x 18" x 13" sheet pans or 5 x 12" x 20" hotel pans on 5 rack slots, runs programmable multi-stage recipes from a 10" touchscreen and controls humidity automatically. A 6-mode automatic wash with twin chemical tanks cleans the cabinet. It needs 208/240V 3-phase power, a water line and a drain.

Questions buyers ask
What electrical service does it need?
208/240V, 3 phase. Atosa lists 21/24 amps (min/max) and a 30/30 A breaker (208V/240V), 7.4 - 9.9 kW. It ships with an SJTOW 4 x 10 AWG power cord; Atosa's manual says to connect it to the supply through an easily reached all-pole disconnect switch, installed by a qualified electrician. No plug type is published.
What water and drain hookups does it need?
A potable water line to the 5/16" OD push-to-connect inlet at 30 to 90 PSI (Atosa sheet) and a 1" ID / 1-1/2" OD drain. Atosa's manual asks for incoming water no warmer than 90°F, hardness no higher than 120 mg/L and an air gap of at least 1" at the floor drain.
Does it need a hood?
Atosa's manual says to install the oven under an exhaust hood of adequate capacity or vent the fumes outside through a high-temperature pipe. Atosa sells the AEC11C condensation hood for this model, but publishes no ventless listing, so check with your local inspector.
Can it sit on the floor or a counter?
It needs a level, fireproof surface that can carry the full load; Atosa says never to set it directly on the ground. Atosa's matching stands are the AS-5171, ASR-5171 or ASR-5171D. To stack two ovens use stacking kit ASK-11 (2 AEC-0511E, or an AEC-0511E on top of an AEC-0711E or AEC-1011E).
How much clearance does it need?
Atosa's manual asks for at least 6" on each side and 28" behind it from fryers or other hot equipment, in a room above 41°F with at most 70% humidity.
What does the warranty cover?
Atosa's spec sheet and website list a 1 year parts and labor warranty. Atosa says installation, water quality and cleaning must follow its manual or the warranty can be voided.
Do you match lower prices?
Yes. Atosa products are covered by our Best Price Guarantee. Call (201) 467-8222 with the lower price.
