The Southbend Sirius II-4-SB is a gas boilerless convection steamer for kitchens that want steamed food without a boiler or a 3-phase electrical service. It holds 4 pans 2-1/2" deep. A fan moves the steam past the pans, incoming water is preheated for fast recovery, and the unit needs gas, 120V, a water line and a hood.

Boilerless convection steam
Steam forms in the cast aluminum compartment, and a fan pulls it past the pans and against the heated walls to reheat it.
Fast recovery
Incoming water is preheated inside the unit, and the cast compartment holds heat for quick recovery.
Clean water reservoir
The reservoir keeps food out of the water, and a manual front drain valve empties it.
Four cooking modes
Soft poach, traditional steam, high heat steam or a custom setting up to 230°F; the control panel pulls out for service.
Redundant safety
A hidden magnetic door switch, low-water and high-limit switches, temperature and water probes and a fill timer.
Delivery and setup

- Tailgate delivery is drop-off at your entrance and does not include inside delivery or unpacking; plan help for a 225 lb unit.
- Tell us natural gas or propane when you order.
- Install it under a hood for the flue products, with 4" clear on the left side.
- Have qualified installers connect gas, water (with backflow protection) and power, and run the drain in piping rated above 160°F.
- If a water treatment (Terry) system is installed, Southbend requires purging 2-3 gallons of water at installation and at each cartridge change, before the water reaches the steamer.
- On a floor other than quarry tile, cement or natural stone (for example epoxy), Southbend asks you to contact the factory for installation options first. Call us and we will check.
- Inspect the shipment before signing for it and note any damage on the delivery receipt.
Questions buyers ask
Does it need a boiler or a 3-phase circuit?
No. It is a gas boilerless steamer: steam forms in the cooking compartment, heated by a burner outside the water reservoir. Each compartment needs 120V power, a gas line and a water line.
How many pans does it hold?
4 pans 2-1/2" deep, 2 pans 4" deep or 1 pans 6" deep (12" x 20").
How much gas does it use?
Southbend's spec sheet rates the Sirius II at 27,000 BTU per compartment. Natural gas needs 3.5" W.C. and propane 9" W.C., both 13.5" W.C. maximum, through a 1/2" NPT line.
Does it need a hood?
Yes. Southbend states that single and stacked units require a hood to vent the flue products.
What water quality does it need?
Southbend's 2026 warranty sets limits of 60 ppm total dissolved solids, 2 grains (35 ppm) hardness, pH 7.0-7.5 and 30-60 psi water pressure. The spec sheet adds that good water quality is the owner's responsibility and recommends a water treatment system matched to your water.
What clearances does it need?
4" on the left is mandatory; space on the right and at the rear is recommended. Locate it near a floor drain.
What does the warranty cover?
Southbend covers parts and labor for 1 year from purchase, serviced by a Southbend Authorized Service Agency, up to 18 months from purchase from the factory. Door and rubber seals and similar parts are limited to 90 days. Improper installation and failures caused by poor water quality are not covered.
