A high-temperature undercounter dishwasher that washes up to 30 racks an hour and sanitizes with a 180°F rinse.
The Fagor CO-502W from the EVO Concept line fits under a counter in restaurants, cafes and bars. Its built-in booster heats the final rinse to 180°F, so it sanitizes with hot water instead of chemicals, and it uses 0.53 gallons per rack. It washes dishes, glasses or works as a sanitizer, and comes with a flat rack, a peg rack and a cutlery container.
Measure the counter opening and the delivery path. This unit needs a 208-230V circuit, a hot water line and a drain within reach of its 5 ft. hoses; have a licensed electrician and plumber connect it.
The built-in booster brings the rinse to 180°F, and hot water assurance keeps the cycle from advancing until it gets there.
Multi Power lets you run at half, 2/3 or full power, trading speed against electrical load.
Double-skin insulation keeps noise under 65 dBA, and Soft Start ramps up the wash pump to protect glassware.
Drain pump, detergent pump, rinse aid dispenser and pressure gauge come standard.
A 208-230V, 60 Hz supply. It ships set to half power, drawing 15 A at 208V to 17 A at 240V on single phase, with a 6 ft. cord and NEMA 6-20P plug. Higher power settings draw up to 30 A single phase or 19 A three phase and need a matching circuit, so ask an electrician before changing it.
